Tastings prove very little. Everything tastes good when it is prepared without time pressure and served to someone who was invited.

Our food locations test differently. The product goes on the menu, is prepared by staff during a normal service, and is bought by people who paid for it and did not know it was new.

What decides the outcome

Four numbers and one observation. Everything else is opinion.

Food cost

The real cost per portion in Polish conditions, including waste and the part of the product that never reaches the plate.

Preparation time

How long it takes at peak service, by a member of staff who is not the owner and has not been on a training course.

Margin

What remains after cost, labour and the price the local market will actually accept.

Repeat purchase

Whether people come back for it. A product bought once is a curiosity, not a business.

Go — the product enters the offer and we look for further locations.

No-go — we report back to the manufacturer with the reason.

A no-go is not a verdict on quality. Often it is a matter of price, preparation time or the local market being too small for the category. We say which one it was.

A commercial unit on the main tourist street of Zakopane.

Located in one of Poland's best-known mountain tourism destinations, on a street where a food product meets a large and constantly changing group of consumers.

For a food manufacturer this answers questions a tasting session never will: will people buy it a second time, does it survive service at peak hours, and does the margin hold once staff time is counted.

A local production partner — not our property.

Working with a bakery gives access to something a test kitchen cannot provide: real production conditions, real batch sizes and a baker who will say immediately whether a recipe works in a working day.

Mobile Food Partner Network

Mobile Food Pilot Network

A network of trailers belonging to a partner producing natural ice cream.

Mobile units reach places and moments that fixed premises do not: events, seasonal peaks, changing locations. They also impose the toughest discipline — a short menu, minimal equipment and no room for a complicated preparation.
